And Now For Something Completely Different...

Having had my fill of rich, artery-clogging entrees for awhile...here's a lunch that's been hitting the spot for me.

pita bread
hummus
cucumber
tomato
leaf lettuce

My attempts at eating lower on the food chain always seem stymied in the end by the problem of time -- just finding the time for all that peeling and chopping and cooking. This is a quick and tasty way to feel healthy and virtuous.

Yum, except for the cucumber. Yum, hummus! The perfect food for traveling.

We like hummus sandwiches too. We sometimes skip the hummus and have vegetable subs by adding pepper strips, thin carrot strips, etc. and drizzle with Italian dressing, all on a hearty roll. I like to peel and cut up enough vegetables for a few days...makes it easy to create a quick sandwich, salad, or snack to dip.

Do you like avocado? We slice or mash some avocado (you can add a few drops lemon juice & pepper or other seasoning) as a substitute for hummus too.

A blast from my past that I'm considering revisiting is miso -- it's a thick paste that's like spreadable soy sauce. It comes in different strengths of flavor and makes a very good, rich vegetarian soup/gravy base; but back when I was a crunchy granola college student I'd sometimes put a thin layer of it on top of peanut or cashew nut butter in a sandwich, for taste and for an extra shot of protein.
